Those looking to add more fiber to their diet have a flour in their corner: Flourish, made with a high-fiber strain of wheat.

It’s nothing like spinach in the mashed potatoes. Adding a boost of fiber to home-baked goods, even sugary holiday treats, is easy with a new all-purpose flour. Flourish — made from a strain of white wheat, with a naturally high fiber content, grown by farmers in various locations and processed by Bay State Milling — provides 24 grams of fiber in a cup, compared with an average 3.4 grams for regular all-purpose. The good news is that Flourish performs like regular unbleached all-purpose flour in pie crust, the essential test, and in poundcake. The downside is that it’s expensive.
